Kimchi Cheese Omelet

Happy to find a jar of kimchi in our fridge, I quickly decided to make a kimchi cheese omelet for breakfast.

Super simple: chop kimchi, fry a little, add two eggs, sprinkle grated cheese. The sour and spicy taste of kimchi was a perfect complement to the eggs, and the cheese added a gooey texture that contrasted nicely with the kimchi’s crunch.
